This is a dreamy crumble top recipe for any fruit pie.
3/4 cup unsalted butter
1 cup oats large flake
1 cup (packed) brown sugar
3/4 cup flour
Pinch of salt
1/2 cup chopped pecans for added crunch and texture (optional)
Process all ingredients except nuts in food processor for 30-60 seconds . The mix should not have any dry flour left visible and should resemble cookie dough. Add nuts.
You can use any combination of fruit mixed with 1/2 tsp cinnamon and 1-2 Tablespoons white sugar to make about 10 cups. I like chopped apples. Or peeled and chopped peaches and blueberries. Or a mix of rhubarb and strawberries (add extra 1/2 cup sugar to rhubarb mix).
Butter a shallow 9 inch by 13 inch baking dish. Top with fruit. Use fingers to spread crumble topping over fruit. Bake at 375 degrees for about 40-45 minutes.
